Food
safety and sanitation are integral to operating a successful
food service. The Center for Disease Control (CDC) estimates that
because of foodborne illness 76 million people fall ill, 325,000
are hospitalized and 5,000 Americans die annually. Because of
these alarming statistics many states require certification of food
managers which may include a written food safety exam. This course
will provide you with the education necessary to take a national
exam. The course is based on the principles of the 1999 FDA Food
Code . It includes the latest information and recommendations regarding
sanitation and food safety.
The University of Connecticut, Department of Nutritional Sciences
was awarded a United States Department of Agriculture (USDA) grant
in food safety to develop a food safety distance education course
for food handlers. Through grant funding we were able to develop
a distance education course for food handlers in English, Spanish,
and Vietnamese.
